Method

  1. Preheat the oven to 200C. Drizzle olive oil over each salmon fillet, squeeze over the lemon juice, then add the sliced leek and carrots. Add a little more oil over the vegetables.
  2. Splash a little white wine over each, season with salt and pepper, then wrap firmly.
  3. Bake in the oven for 25 minutes.
